Roasted Mini Radish & Pancakes
Spring & autumn are the ideal seasons for those tiny cute little radish. I bought this bag because all of the leafs are still attached. Mini radish are great to make pickles, let us come back to that another time, today I planed to grill them and make some pancakes instead. Roasting the radish helps to remove the spicy taste, at the same time all the water in the radish remained during the roasting process, they became crunchy, sweet and juicy. You should definitely try this!
1 bag mini radish with leafs
1/4 tea spoon salt
Pinch of black pepper
1 spoon olive oil
For the leaf pancake
Radish leafs app.60 grams
Cut off leafs from mini radish, rinse them under water.
Cut them in half, set them in an oven tray, sprinkle salt, black pepper and olive oil over.
Pre heat oven 200 degrees with fan, oven bake radish for 20-25 minutes.
Meanwhile, rinse radish leafs, cut them in thin slices.
Set leafs in a bowl, add in 2g of salt and stir evenly.
Let leafs rest for 5 minutes, add in flour and water, stir evenly.
Drizzle few drops of olive oil in a pre heated frying pan.
Make four pancakes in the frying pan, fry until both side are golden.
Season with your favourite seasoning.
